I have experienced the tuna fishing boat at the Toi town, which I had been hoping for.
The tuna from the Oma city in Aomori is famous for a long time because it has been recognized as really excellent tuna.
Toi is located on the opposite side of the Straits of Tsugaru from Oma.
Fishermen of Toi generally use longline fishing, unlike pole-and-line fishing of Oma.
Hundreds of baited hooks are hung, and the fishermen catch big tuna. Witnessing fishermen catch tuna, I realized the strength of live tuna. Since this experience, I always want to treat tuna with extreme care. To suit the tuna of the moment, I would adjust the details of cooking process of sushi rice and timing of aging tuna. Similarly for other fish, I would serve it with special treatment to enhance the flavor of it, for instance, by using homemade salt.
