こだわり I have experienced the tuna fishing boat at the Toi town, which I had been hoping for. The tuna from the Oma city in Aomori is famous for a long time because it has been recognized as really excellent tuna. Toi is located on the opposite side of the Straits of Tsugaru from Oma. Fishermen of Toi generally use longline fishing, unlike pole-and-line fishing of Oma. Hundreds of baited hooks are hung, and the fishermen catch big tuna.

Witnessing fishermen catch tuna, I realized the strength of live tuna. Since this experience, I always want to treat tuna with extreme care. To suit the tuna of the moment, I would adjust the details of cooking process of sushi rice and timing of aging tuna. Similarly for other fish, I would serve it with special treatment to enhance the flavor of it, for instance, by using homemade salt.

I hope that you all will enjoy the specialties of Sushi Restaurant Hiroki. The photo shows the 19-ton tuna fishing boat of Mr. Sakai, named the 21st Koryomaru. I went aboard this boat to the Tsugaru Strait.

The proprietress of the restaurant has been certified in several SAKE-related categories: 2008: Kikisake-shi (Master of SAKE), certification of Sake Service Institute (SSI) 2011: Sakashou (Specialist of SAKE), certification of SSI 2014: A finalist of the International Kikisake-Shi Competition; Meiyo Kikisake-shi (Hall of Fame Master of SAKE)

Sakashou is the specialist of Japanese Sake, Shochu, and Awamori (strong Okinawa liquor), which means a higher qualification of Kikisake-shi. Please enjoy Sakashou's unique sake service.
